I am super excited to feature our first recipe by Aline Kamakian, Co-founder of Mayrig.
Lentil salad is one of my favorite dishes. Lentils are a powerhouse of nutrition and a great meatless option for everyone and in particular vegetarians and vegans.
What’s so good about them? They are a good source of potassium, calcium, zinc, niacin and vitamin K, but are particularly rich in dietary fiber – meaning they will keep you full and satisfied for a long while – , lean protein, folate – an essential vitamin that plays an important role in DNA synthesis and repair, also one of the most important vitamins for pregnant women – , and iron. In fact, I started eating lots of lentils when I found out I was anemic at the age of 11 and the doctor recommended I eat lentils, among other Iron-rich foods.
