The recipe yields approx 6 muffins:
* INGREDIENTS *
- 1/2 cup quinoa flour
- 1/2 cup quinoa flakes
- 2 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 2 tsp cinnamon
- 2 bananas, very ripe
- 2 eggs (Vegan Option: substitute the eggs by combining 2 Tbsp chia seeds or flax seeds with 6 Tbsp lukewarm water. Let it sit for 10 min to allow mixture to thicken)
- 2 Tbsp honey, maple syrup or rice syrup
* DIRECTIONS *
- Preheat oven to 205 C
- Mix flour and flakes with the other dry ingredients.
- In a separate bowl, mix together bananas, eggs and honey; add to dry ingredients.
- Pour into greased muffin tins
- bake for 20-25 min or until toothpick comes out clean.
- Fill muffin tins to 1/2 full.
