Pumpkin Spice Donuts

Let the Christmas baking begin!

These pumpkin donuts are so light and nutritious, which makes them a perfect accompaniment to your morning coffee or on-the-go snack.

 

DRY INGREDIENTS

1 cup oat flour

¼ cup stevia (or granulated  sweetener of choice, adjust to taste)

1 tsp baking powder

½ tsp baking soda

1 tsp cinnamon

1 tsp pumpkin pie spice (or sub ½ tsp cinnamon, ⅛ tsp nutmeg, ⅛ tsp ginger, pinch of ground cloves)

¼ tsp nutmeg

½ tsp allspice

½ tsp salt

 

WET INGREDIENTS

1 egg

2 Tbsp unsweetened apple sauce

⅓ cup pumpkin pureé

⅓ cup nonfat Greek yogurt

¼ cup light almond milk

1 tsp vanilla

 

INSTRUCTIONS

1)Preheat oven to 350°F (180°C).

2) Mix dry ingredients and wet ingredients separately.

3) Combine dry ingredients into wet, adjusting sweetness to your preference

4) Spoon into donut pan (My batter filled a 8-donut pan)

5) Bake 15-18 minutes, until a toothpick comes out clean.
