Easy Mango Sorbet (and popsicle!)

It’s almost 50 degrees celsius outside, and I still have a bunch of amazingly sweet frozen mango chunks in the freezer. What do I do? Mango sorbet of course.

This recipe is super quick and easy to whip up anytime. It is also sugar and dairy-free, making it a perfect guilt-free dessert for the whole family to cool down this summer.

Add a little more liquid and you can easily turn this recipe into a popsicle, or even a slushy!. The kids will love it!

So without further ado, here’s how you can make this delicious sorbet:

Ingredients

  • 2 cups frozen mango chunks
  • 1/2 cup freshly squeezed orange juice (more for popsicle)
  • Juice of 1 lime
  • 1 tsp chia seeds (optional)

Method

For the sorbet:

Throw in all ingredients in a high speed blender (we love our Vitamix) and blend, blend, blend until all combined and desired consistency is reached. I don’t mind a few mango chunks in my sorbet but you can blend until totally smooth.

Serve immediately with or without toppings. We love mango with unsweetened shredded coconut.

Store leftovers in the freezer for a quick, anytime palette cleanser, dessert or snack.

For popsicles:

Pour the blend in popsicle molds and freeze! If you don’t have a mold, disposable paper or plastic cups, and ice cube trays for mini popsicles work great too. Make sure you don’t forget to insert the wooden popsicle sticks before your freeze though!

And now…. enjoy! 🙂
