APPLES and CINNAMON. I don’t know about you but I absolutely love this combination, more so now as it screams FALL and the weather in the UAE is finally cooling down.
So to celebrate, I am kicking off the seasonal recipes with a breakfast favorite….. PANCAKES! but not just any pancakes. Apple Cinnamon Pancakes with an Almond Spiced Drizzle, that is

Apple Cinnamon Pancake with Almond Spiced Drizzle
Ingredients
- 1/2 Cup Gluten Free Oats
- 1/4 Cup Unsweetened Apple Sauce
- 1 Egg
- 1 Teaspoon Vanilla Extract
- 1 Teaspoon Cinnamon
- 1/2 Teaspoon Baking Powder
- 1 Pinch Sea Salt
- Coconut Oil
- 1 Tablespoon Almond Butter
- 1-2 Tablespoon Almond Milk
- 1 Teaspoon Cinnamon
for the drizzle
Instructions
- Put all pancake ingredients in a blender - including oats, applesauce, egg, cinnamon, sea salt and baking powder - and blend until well combined.
- Once blended, transfer batter to a bowl and let it settle while you warm-up the skillet with some coconut oil.
- Once skillet is warm enough, pour in 1/4 cup full of the batter in the pan. Wait until bubbles appear before you flip your pancake with a spatula. Cook until golden brown.
- Repeat the above until you ran out of better. You may want to clean up the skillet and add some more coconut oil in between pancakes.
- For the cinnamon spiced almond drizzle, you can either warm up the almond butter and add cinnamon or blend the almond butter, almond milk and cinnamon. I personally like to blend everything! 🙂
